Outline and Purpose of the Course In this seminar, students are required to present the data of his/her projects. In addition, each student has to introduce the recent
journal papers about structural biology, which are related to his/her on-going project. During this seminar students will get the skills of presentation and the logical thinking.
Schedule and Contents Our special concern is structure/function relationships of food related enzymes and proteins such as amylase, protease, transglutaminase, glutaminase, ovalbumin, soybean protein, and ovotransferrin. The field of jounal paper is as follows.
1. Protein expression, purification and crystallization
2. Structure determination and refinement by X-ray and neutron crystallography.
3. Functional analysis of proteins based on the structures determined by X-ray crystallography.
4. Functional analysis of proteins including intrinsically disordered proteins.
5. Design of new functional proteins based on their structures including the method of computational simulations.

Course Requirements Students should have the basic knowledge about biochemistry and protein chemistry.
